Tasting Procedure
In order to guarantee a fully independent and fair judgment, each member of the jury will have to fill in, separately and independently, a special tasting sheet according to the official rules of the International organisation of Vine and Wine (O.I.V) and the International Union of Oenologists.
Each jury is made up of minimum 8 experts and is chaired by a long experienced judge of Monde Selection.
In order to guarantee a fully objective judgment, all the scores given by the different jury members are added up and averaged to a final percentage.
The tasting procedure is essentially based on organoleptic/sensory analysis.
The sensory quality of a product is measured as follows:
- The eye will determine the intensity, appearance, type, brilliance and clarity of the product.
- The nose will discover the bouquet, smell and aroma.
- The mouth will reveal taste and flavour.
- Harmony of nose and length in the mouth will give a final global appraisal of the product.
Further analysis may be carried out at the official laboratories accredited by the Federal Ministry of Economic Affairs.
