The Monde Sélection jury members particularly appreciated this very distinctive-tasting cheese which, despite being produced from pasteurised milk, has organoleptic characteristics comparable to those of great traditional raw milk products.
It was therefore awarded the Grand Gold Quality Award for the seventh consecutive time.
Among the elements that were taken into account by the tasters who evaluated this cheese, it is worth emphasising the clean and particularly appetising visual appearance of the cheese as well as the extremely creamy and melt-in-your-mouth texture present at its core when it is cut.
On the nose, the cheese offers a range of delicious and very natural fermentation aromas without emanating any disturbing or overly animalic smells.
In terms of texture, the smoothness of the product offers a particularly pleasant mouthfeel.
As far as its palate is concerned, the cheese is well-pronounced without being aggressive.
In the finish, it develops a hint of salinity which gives it a very pleasant overall character.
The product is best enjoyed if taken out of the fridge and maintained at room temperature for at least half an hour before consuming. It is an excellent cheese to round off the end of a meal, and is ideally accompanied by fresh bread.
Among its other awards, this product has also been awarded the “supergold” gold medal at the 2012 World Cheese Awards.
It therefore comes as no surprise that this cheese has been nominated for the 2022 Monde Selection Jury Prize.
