Tradition and barrel-aged depth in an island-crafted vinegar

Hailing from the island of Pašman in Croatia, Pašman Libre is a striking example of how geographic isolation can foster artisanal innovation. Crafted by Ana and Krsto Matulić of OPG Matulić, this small-batch balsamic fig vinegar reflects over nine years of dedication to local tradition, ecological practices and sensory refinement. Aged for a minimum of two years in cherry wood barrels and made exclusively from fresh figs, it has earned multiple international awards and become one of Croatia’s most celebrated gourmet products.

Presented in a compact, elegant glass bottle, the packaging underscores the premium character of the vinegar while remaining practical for both gifting and table use.

The jury was impressed by the vinegar’s deep, glossy appearance and subtly syrupy texture—an immediate visual cue to its richness and quality.

Aromatically, Pašman Libre opens with a vivid acidity, tempered by gentle fig notes and a refined woody nuance from the cherry barrels. The balance between fruit and sharpness is carefully managed, offering complexity with a nice intensity.

On the palate, the vinegar is light yet flavourful, with notes of red fruit—cherry and dark plum—rising above a subtle fig background. A soft acidity lifts the profile, while restrained sweetness and delicate woody undertones add dimension. Unlike heavier balsamics, it maintains fluidity, enhancing its versatility across both savoury and sweet applications.

The texture is one of poised balance: smooth and velvety enough to coat the palate, yet light enough to remain agile in use. This near-silky body supports aromatic lift and clean flavour release, making it suitable for everything from dressings to dessert accents.

The finish is long and graceful, with echoes of toasted wood, light caramelisation and a faint hint of coffee. These elements taper off quietly, leaving the palate refreshed and intrigued.

For its precision, elegance and artisanal integrity, Pašman Libre has rightfully earned its place as a finalist for the 2025 Jury Prize.
