Crafted from acorn-fed pigs raised during the bellota season and aged for four years, this ham is a clear expression of the house’s dedication to both quality and authenticity. The jury was immediately drawn to the ham’s visual appeal with a warm ruby hue and soft white fat. The modest yet effective marbling signals a careful balance of flavour and texture, offering an inviting and refined appearance.

On the nose, the product delivers a clean and delicate aromatic profile. Subtle nutty and meaty notes rise gently, with no distracting or overpowering elements—allowing the natural qualities of the Iberian ham to shine with clarity.

Tasting confirms this elegance. The flavour is harmonious, offering cured meat richness and roasted nut notes alongside a well-judged salinity that enhances without overwhelming. The fat melts smoothly, bringing depth and softness to the palate. While the bellota character is present, it expresses itself with subtlety rather than intensity, resulting in a rounded and accessible profile.

The texture is satisfying, with just enough resistance to give structure. In some parts, particularly where muscle density is higher, a slightly firmer bite may be noticed, though this is offset by the smoothness of the fat, which adds to the overall pleasure.
