The unbeatably refreshing taste of a supreme wheat beer

The Privat Brauerei Waldhaus brewery was founded in 1833 in the heart of the southernmost located Black Forest Nature Park. Boasting over 185 years of experience and spanning four generations of brewers, the brewery still lives up to the motto devised by its founder Johann Schmid, whose philosophy was: “Better smaller, but exquisite” (“Lieber kleiner – aber feiner” in German).

Boasting over 185 years of experience and spanning four generations of brewers, the brewery still lives up to the motto devised by its founder Johann Schmid, whose philosophy was: “Better smaller, but exquisite” (“Lieber kleiner – aber feiner” in German). Like all beers produced by this brewery, the Waldhaus Schwarzwald Weisse is brewed using 100% renewable energy sources (a hydroelectric dam* and photovoltaic panels). As its name suggests, the “Weisse” belongs to the white beer category, which indicates the predominant use of wheat malt in the production process. It is important to note that the term “Weisse” refers to the colour white, whereas the term “Weizen” refers to wheat. This distinction has often led to some confusion among consumers, given that the same brewery also produces dark wheat beers such as the Waldhaus Schwarzwald Weisse Dunkel.

Nevertheless, it must be noted that, as is the case with this Waldhaus Schwarzwald Weisse, the use of wheat contributes to the production of an abundantly refreshing, lively, and light-tasting beer owing to the slightly  acidic nature of the cereal. The slight cloudiness apparent in this beer has to do with the crushed wheat grain, which tends to release more flour than barley, as well as with the rather high protein content, which generates a natural cloudiness. As pointed out by the Monde Selection jury, the Waldhaus Schwarzwald Weisse is truly emblematic of the German brewing tradition. “Each year, one product per category is awarded the Prize of the Jury as a token of excellence in know-how and quality. In order to qualify, the product must be unanimously selected as a “coup de cœur” by the jury members. The winner of the Prize of the Jury is then selected from a group of just 5 nominees, which makes this award an even greater honour for the recipient.”
